Keto Chopped Salad with Green Goddess Dressing

Ingredients
  

Salad

  • 3 ounces mixed salad greens
  • 1 hard-boiled egg halved
  • 2 ounces sliced turkey roughly chopped
  • ¼ cup cucumber chopped
  • 1 tablespoon red onions diced
  • 1/3 avocado sliced

Dressing

  • 1/6 avocado
  • 1 stalk green onion chopped
  • 1 tablespoon basil chopped
  • 1 tablespoon cilantro chopped
  • ½ clove garlic minced
  • ¼ teaspoon lemon juice
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper
  • ½ tablespoon unsweetened almond milk

Instructions
 

  • For the dressing, combine the avocado, green onion, basil, cilantro, and garlic in a food processor. Pulse to combine.
  • Add the remaining dressing ingredients to the food processor, and pulse until the dressing is smooth and creamy. Add water if necessary to thin dressing to desired consistency.
  • To assemble the salad, place the mixed greens in a bowl. Top with the egg, turkey, cucumber, red onion, and sliced avocado.
  • Drizzle the dressing on the salad just before serving.
