Keto Cheesy Avocado Baked Eggs
Looking to break out a breakfast rut?Do you have a hard time coming up with quick keto-friendly recipes for breakfast? This has to be of the most common requests I receive over here.
Don’t give up yet. Skip the Dunkin’ Donuts line and give this a try. I now have my six year old asking for this…. every. morning.
It is simple to prepare (only three main ingredients) and will keep you satisfied without a need to snack before lunch.
The only ingredients missing are spices (Everything But The, and salt and pepper and hot sauce (optional).
First prepare those avocado halves in ramekins. The pit on my avocado was quite large, so I didn’t actually need to scoop out any of the flesh to make room for an egg.
Add the eggs.
…Cheese and seasoning. Go ahead and get dressed in the next 10-15 minutes while you pop them in the oven.
Viola! I like to add hot sauce to mine, but they are also delicious as is.
Keto Cheesy Avocado Baked Eggs
Ingredients
- 1 avocado halved lengthwise, pitted
- 2 eggs
- 4 tablespoons shredded Colby cheese divided
- 1 pinch Everything But the Bagel Seasoning
- salt and pepper, to taste
Instructions
- Preheat the oven to 475°F.
- Place each avocado half in a ramekin, cut side facing up. Scoop out enough avocado from each half to fit one egg in each.
- Using two small bowls, carefully crack an egg into each. Do not break the yolk.
- Spoon one yolk into each avocado half and fill to the brim with egg white.
- Sprinkle 2 tablespoons of Colby cheese over each avocado half. Season evenly with Everything but the Bagel seasoning and salt and pepper to taste.
- Place the ramekins in the preheated oven carefully so the avocado halves don’t tip over.
- Bake 15 to 20 minutes, or to your desired doneness.
