Keto Avocado Lime Cheesecake

Ingredients
  

Base

  • 1 cup almond flour
  • 1 tablespoon coconut oil
  • ½ tablespoon butter
  • 3 tablespoons Swerve granular sugar replacement

Filling

  • 1/3 cup Swerve
  • 10 ounces cream cheese
  • 1 avocado peeled, pitted, and roughly chopped
  • ¾ cup whipping cream
  • Zest and juice of 1 lime

Instructions
 

  • To create the cheesecake base, add all the base ingredients to a food processor. Pulse to form a crumbly mixture.
  • Pour the crumb mixture into a 6" springform pan. Press firmly into the base, creating an even layer. Transfer to the fridge to set while you prepare the filling.
  • Add Swerve to a food processor and blend to a fine powder.
  • Add cream cheese and avocado and blend until smooth.
  • Pour the cream cheese mixture into a large mixing bowl. Add the lime zest and juice and the whipping cream. Whisk vigorously until the mixture is thick and creamy.
  • Remove the cheesecake base from the fridge. Pour the filling over the base, and use a spoon or spatula to level it out.
  • Transfer to the fridge to set for a minimum of 5 hours but preferably overnight.
  • Slice into 6 pieces and serve cold
