To create the cheesecake base, add all the base ingredients to a food processor. Pulse to form a crumbly mixture.
Pour the crumb mixture into a 6" springform pan. Press firmly into the base, creating an even layer. Transfer to the fridge to set while you prepare the filling.
Add Swerve to a food processor and blend to a fine powder.
Add cream cheese and avocado and blend until smooth.
Pour the cream cheese mixture into a large mixing bowl. Add the lime zest and juice and the whipping cream. Whisk vigorously until the mixture is thick and creamy.
Remove the cheesecake base from the fridge. Pour the filling over the base, and use a spoon or spatula to level it out.
Transfer to the fridge to set for a minimum of 5 hours but preferably overnight.
Slice into 6 pieces and serve cold
