Cream of Broccoli Soup
Ingredients
- 1 T ghee or grass-fed butter
- ½ white onion diced
- 2 cloves garlic minced
- 3 cups chicken bone broth
- 1 pound broccoli florets
- 1 leek sliced (whites only)
- 1 cup full-fat coconut milk solids, and liquid
- Salt and pepper to taste
Instructions
- Heat the ghee over medium-high heat. Add the onion, and saute for 1-2 minutes until it starts to turn translucent. Add the garlic and cook for one minute (until fragrant).
- Pour in the chicken bone broth and add in the broccoli florets and leek. Salt and pepper to taste.
- Bring to a boil, then lower heat to a simmer for 20 minutes (or until the broccoli is fork-tender).
- Add the coconut milk and allow it to fully warm (about 2 minutes).
- Transfer the ingredients to a food processor, and puree until smooth.
