Cream of Broccoli Soup

Ingredients
  

  • 1 T ghee or grass-fed butter
  • ½ white onion diced
  • 2 cloves garlic minced
  • 3 cups chicken bone broth
  • 1 pound broccoli florets
  • 1 leek sliced (whites only)
  • 1 cup full-fat coconut milk solids, and liquid
  • Salt and pepper to taste

Instructions
 

  • Heat the ghee over medium-high heat. Add the onion, and saute for 1-2 minutes until it starts to turn translucent. Add the garlic and cook for one minute (until fragrant).
  • Pour in the chicken bone broth and add in the broccoli florets and leek. Salt and pepper to taste.
  • Bring to a boil, then lower heat to a simmer for 20 minutes (or until the broccoli is fork-tender).
  • Add the coconut milk and allow it to fully warm (about 2 minutes).
  • Transfer the ingredients to a food processor, and puree until smooth.
