Ingredients
- 2 large eggs
- 100 g cooked chicken thighs
- Salt and pepper
Instructions
- In a bowl, whisk the eggs with salt, pepper, and any desired spices.
- Heat a non-stick pan over medium heat, add the cooked chicken thighs or drumsticks, and warm them through.
- Create a gentle whirlpool in a saucepan of simmering water and carefully slide the eggs into the whirlpool.
- Poach for about 3-4 minutes until the whites are set but the yolks are still runny.
- Serve the poached eggs with the cooked chicken.
