Instructions
 

  • In a bowl, whisk the eggs with salt, pepper, and any desired spices.
  • Heat a non-stick pan over medium heat, add the cooked chicken thighs or drumsticks, and warm them through.
  • Create a gentle whirlpool in a saucepan of simmering water and carefully slide the eggs into the whirlpool.
  • Poach for about 3-4 minutes until the whites are set but the yolks are still runny.
  • Serve the poached eggs with the cooked chicken.
