Ingredients
  

  • 2 lbs boneless skinless chicken breasts, cut into strips
  • 3 bell peppers (1 red
  • 1 yellow and 1 green), seeded and sliced
  • 1 white onion halved and sliced
  • ½ t garlic powder
  • ½ t chili powder
  • 1 t ground cumin
  • 1 t sea salt
  • ½ t black pepper
  • 2 T fresh lime juice
  • 1 T chopped fresh cilantro for garnish

Optional toppings:

  • Sour cream, shredded Mexican blend cheese, hot sauce

Instructions
 

  • In the bowl of a slow cooker, add all ingredients, except the lime juice, cilantro and optional toppings.
  • Cover and cook on HIGH for 2 hours, or until the chicken has cooked through and the peppers and onion are tender.
  • Just before serving, add the lime juice and mix well. Top with the cilantro.
  • Serve hot, with the sour cream, Mexican-blend cheese, and hot sauce, if desired.
