Chicken Fajita Pot
Ingredients
- 2 lbs boneless skinless chicken breasts, cut into strips
- 3 bell peppers (1 red
- 1 yellow and 1 green), seeded and sliced
- 1 white onion halved and sliced
- ½ t garlic powder
- ½ t chili powder
- 1 t ground cumin
- 1 t sea salt
- ½ t black pepper
- 2 T fresh lime juice
- 1 T chopped fresh cilantro for garnish
Optional toppings:
- Sour cream, shredded Mexican blend cheese, hot sauce
Instructions
- In the bowl of a slow cooker, add all ingredients, except the lime juice, cilantro and optional toppings.
- Cover and cook on HIGH for 2 hours, or until the chicken has cooked through and the peppers and onion are tender.
- Just before serving, add the lime juice and mix well. Top with the cilantro.
- Serve hot, with the sour cream, Mexican-blend cheese, and hot sauce, if desired.
