Carnivore Tater Tots
Ingredients
- 1 pound 450g ground pork
- 1/2 pound 225g pork liver
- Salt and pepper to taste
- Cooking fat such as tallow or lard for frying
Instructions
- Start by preparing the pork liver. Rinse it thoroughly under cold water and pat it dry with paper towels.
- In a food processor, add the pork liver and pulse until it’s finely minced.
- In a mixing bowl, combine the ground pork and minced pork liver. Season the mixture with a generous pinch of salt and pepper. Mix well to ensure the seasoning is evenly distributed.
- Take small portions of the mixture and shape them into tots or small cylindrical shapes, similar to traditional tater tots.
- Heat cooking fat (such as tallow or lard) in a skillet or deep fryer over medium-high heat.
- Once the fat is hot, carefully add the pork and liver tots to the hot oil. Fry them until they are crispy and golden brown on all sides. This should take about 3-5 minutes.
- Use a slotted spoon to remove the tater tots from the oil and place them on a plate lined with paper towels to drain any excess fat.
- Let them cool slightly before serving.
