Baked Salmon with Carnivore Tartare Sauce
Ingredients
- 225 g 8 oz salmon fillet
- Lemon slices
- 2 egg yolks
- Juice of 1 lemon
- Animal fat such as beef tallow, duck fat, or lard
- Salt and pepper
Instructions
- Preheat the oven to 180°C (350°F).
- Place the salmon fillet on a baking sheet lined with parchment paper.
- Season with salt and pepper. Top with lemon slices.
- Bake for 12-15 minutes or until the salmon is cooked through and flakes easily with a fork. Serve with a side of carnivore tartare sauce for added flavour.
For Carnivore Tartare Sauce:
- In a mixing bowl, gently blend together the egg yolks and lemon juice until thoroughly combined. Using a whisk, vigorously beat the mixture until it becomes frothy and well incorporated.
- While continuously whisking, gradually incorporate small portions of animal fat. It is recommended for the fat to be at room temperature or slightly melted for easier blending.
- Continue whisking until the sauce reaches a smooth and creamy consistency. If necessary, add more fat to achieve the desired thickness.
- Taste the sauce and season with salt according to your preference. Whisk again to ensure the seasoning is evenly distributed.
- Transfer the carnivore tartare sauce to a serving dish or small sauce bowls. Accompany the sauce with the salmon fillet or any other dish of your choice.
