In a mixing bowl, gently blend together the egg yolks and lemon juice until thoroughly combined. Using a whisk, vigorously beat the mixture until it becomes frothy and well incorporated.
While continuously whisking, gradually incorporate small portions of animal fat. It is recommended for the fat to be at room temperature or slightly melted for easier blending.
Continue whisking until the sauce reaches a smooth and creamy consistency. If necessary, add more fat to achieve the desired thickness.
Taste the sauce and season with salt according to your preference. Whisk again to ensure the seasoning is evenly distributed.
Transfer the carnivore tartare sauce to a serving dish or small sauce bowls. Accompany the sauce with the salmon fillet or any other dish of your choice.
