Lemony Chickpeas
Chickpeas or garbanzo beans are an easy plant-based protein to include in your diet. Whether you are a vegetarian or just trying to be heart-healthy, this recipe is quick, flavorful and easy to make. Garlic and onions boost the immune system and the carrots and yellow squash are packed with beta carotene. Turmeric decreases inflammation and adds a rich yellow hue to this tasty dish.
Lemony Chickpeas
Ingredients
- 15 oz chickpeas- drained and rinsed
- 1 tablespoon olive oil to saute onions
- 1 medium onion chopped
- 2 cloves garlic minced, or
- ½ teaspoon of garlic powder
- 2 large carrots peeled and sliced
- 1 medium yellow squash sliced
- ½ teaspoon turmeric powder
- 1-2 lemons juiced
- Salt and pepper to taste
- Optional: Serve over brown rice or quinoa
Instructions
- Saute onions in olive oil until golden brown, add garlic.
- Add sliced carrots and yellow squash.
- Continue cooking for about 10 minutes until vegetables are soft.
- Add rinsed chickpeas, then stir in turmeric, salt, pepper, and the juice of 1-2 lemons.
- Serve over brown rice or quinoa.
