Lemony Chickpeas

Ingredients
  

  • 15 oz chickpeas- drained and rinsed
  • 1 tablespoon olive oil to saute onions
  • 1 medium onion chopped
  • 2 cloves garlic minced, or
  • ½ teaspoon of garlic powder
  • 2 large carrots peeled and sliced
  • 1 medium yellow squash sliced
  • ½ teaspoon turmeric powder
  • 1-2 lemons juiced
  • Salt and pepper to taste
  • Optional: Serve over brown rice or quinoa

Instructions
 

  • Saute onions in olive oil until golden brown, add garlic.
  • Add sliced carrots and yellow squash.
  • Continue cooking for about 10 minutes until vegetables are soft.
  • Add rinsed chickpeas, then stir in turmeric, salt, pepper, and the juice of 1-2 lemons.
  • Serve over brown rice or quinoa.
