Keto S’mores Cake In A Jar

Ingredients
  

For the graham cracker crust

  • 1 Tablespoon (15 ml) ghee
  • Dash of salt

To make 6 Graham Crackers

  • 1/2 cup (60g) almond flour
  • 1/2 Tablespoon (4g) flax meal
  • 1 Tablespoon (12g) erythritol
  • 1 teaspoon (2g) cinnamon powder
  • 0.5 teaspoon (1g) baking powder
  • 1 small egg whisked
  • 1 Tablespoon (15 ml) ghee melted
  • Dash of salt

For the chocolate cake layer

  • Make a Flourless Chocolate Cake and chop into 1-inch cubes.

For the chocolate ganache

  • 1 oz (30g) 100% dark chocolate
  • 2 teaspoons (14g) erythritol
  • 2 Tablespoons (30 ml) coconutcream

For the marshmallow layer

  • 4 1-inch cube Simple Marshmallows cut into smaller cubes

Instructions
 

To make 6 graham crackers

  • Preheat oven to 350 F (175 C). Mix all the ingredients together well to form a dough. Place dough on a piece of parchment paper and roll thin. Score with a sharp knife or pizza cutter into 2 by 2 inch squares. Poke a few holes on top of each with a fork for decoration. Place entire parchment paper onto a baking tray and bake for 8-10 minutes until just starting to brown. Let cool.

To make the s’mores cake

  • Food process the graham crackers, ghee, and salt until it forms a crumbly mixture. Place at the bottom of the jar.
  • Add the chopped chocolate cake to the jar and press down.
  • In a saucepan, heat up the coconut cream and melt the chocolate and add the erythritol. Let cool and then pour into the jar saving 1-2 Tablespoons for drizzling on top.
  • Top with the small marshmallow cubes.
  • Drizzle the rest of the chocolate ganache on top.
