Make a Flourless Chocolate Cake and chop into 1-inch cubes.
For the chocolate ganache
1oz(30g) 100% dark chocolate
2teaspoons(14g) erythritol
2Tablespoons(30 ml) coconutcream
For the marshmallow layer
41-inchcube Simple Marshmallows cut into smaller cubes
Instructions
To make 6 graham crackers
Preheat oven to 350 F (175 C). Mix all the ingredients together well to form a dough. Place dough on a piece of parchment paper and roll thin. Score with a sharp knife or pizza cutter into 2 by 2 inch squares. Poke a few holes on top of each with a fork for decoration. Place entire parchment paper onto a baking tray and bake for 8-10 minutes until just starting to brown. Let cool.
To make the s’mores cake
Food process the graham crackers, ghee, and salt until it forms a crumbly mixture. Place at the bottom of the jar.
Add the chopped chocolate cake to the jar and press down.
In a saucepan, heat up the coconut cream and melt the chocolate and add the erythritol. Let cool and then pour into the jar saving 1-2 Tablespoons for drizzling on top.
