Keto Pecan Pie
Ingredients
For the Keto Pie Crust
- 2 cups (240g) almond flour
- 1/2 cup (56g) flax meal
- 1/2 cup (56g) coconut flour
- 1/2 cup (120 ml) water
For the Pecan Pie Filling
- 1 cup (120g) of chopped pecans
- 1 cup (100g) of whole pecan halves
- 3 eggs whisked
- 1/3 cup (78 ml) ghee
- 1 teaspoon (5 ml) vanilla extract
- Dash of salt
- 1/2 cup (90g) erythritol
Instructions
To make the Keto Pie Crust
- Mix together all the ingredients to form a dough.
- Add additional water if needed to form the dough.
- Roll the dough into a larger flat piece and place into a 9-inch pie tin.
- Preheat oven to 350 F (175 C).
To make the Pecan Pie filling
- Melt the ghee and add in the vanilla extract and erythritol.
- In a separate bowl, whisk the eggs and then combine with the ghee and 1 cup of chopped pecans.
- Pour the filling mixture into the pie crust.
- Top with the whole pecan halves.
- Bake for 30 minutes until set. Check to make sure it doesn’t get too browned.
