Kale and Mushroom Sausage Patties
Ingredients
- 2 T coconut oil divided
- ½ bunch kale thinly sliced
- ½ lb mushrooms chopped
- 2 medium garlic cloves minced
- 1 lb ground pork
- ½ t sea salt
- ½ t garlic powder
- ½ t onion powder
- ¼ t fennel seed
- ⅛ t ground ginger
- ⅛ t ground nutmeg
Instructions
- In a large skillet, melt half the coconut oil.
- Add the kale, mushrooms, and garlic, and sauté until the veggies are cooked.
- Place the ground pork in a mixing bowl, and add the veggies and spices. Mix well, and form into patties.
- Melt the other half of the coconut oil over medium heat, and add half the sausage patties. Cook until golden brown on each side and cooked in the middle.
- Repeat with the other half. You may need to add a little coconut oil for the second set of patties.
