Kale and Mushroom Sausage Patties

Ingredients
  

  • 2 T coconut oil divided
  • ½ bunch kale thinly sliced
  • ½ lb mushrooms chopped
  • 2 medium garlic cloves minced
  • 1 lb ground pork
  • ½ t sea salt
  • ½ t garlic powder
  • ½ t onion powder
  • ¼ t fennel seed
  • t ground ginger
  • t ground nutmeg

Instructions
 

  • In a large skillet, melt half the coconut oil.
  • Add the kale, mushrooms, and garlic, and sauté until the veggies are cooked.
  • Place the ground pork in a mixing bowl, and add the veggies and spices. Mix well, and form into patties.
  • Melt the other half of the coconut oil over medium heat, and add half the sausage patties. Cook until golden brown on each side and cooked in the middle.
  • Repeat with the other half. You may need to add a little coconut oil for the second set of patties.
