For the Keto Pie Crust

(240g) almond flour
1/2
cup
(56g) flax meal
1/2
cup
(56g) coconut flour
1/2
cup
(120 ml) water
For the Pecan Pie Filling
1
cup
(120g) of chopped pecans
1
cup
(100g) of whole pecan halves
3
eggs whisked
1/3
cup
(78 ml) ghee
1
teaspoon
(5 ml) vanilla extract
Dash of salt

(90g) erythritol
Instructions
To make the Keto Pie Crust
Mix together all the ingredients to form a dough.
Add additional water if needed to form the dough.
Roll the dough into a larger flat piece and place into a 9-inch pie tin.
Preheat oven to 350 F (175 C).
To make the Pecan Pie filling
Melt the ghee and add in the vanilla extract and erythritol.
In a separate bowl, whisk the eggs and then combine with the ghee and 1 cup of chopped pecans.
Pour the filling mixture into the pie crust.
Top with the whole pecan halves.
Bake for 30 minutes until set. Check to make sure it doesn’t get too browned.
