Ingredients
  

For the Keto Pie Crust

  • 2 cups (240g) almond flour
  • 1/2 cup (56g) flax meal
  • 1/2 cup (56g) coconut flour
  • 1/2 cup (120 ml) water

For the Pecan Pie Filling

  • 1 cup (120g) of chopped pecans
  • 1 cup (100g) of whole pecan halves
  • 3 eggs whisked
  • 1/3 cup (78 ml) ghee
  • 1 teaspoon (5 ml) vanilla extract
  • Dash of salt
  • 1/2 cup (90g) erythritol

Instructions
 

To make the Keto Pie Crust

  • Mix together all the ingredients to form a dough.
  • Add additional water if needed to form the dough.
  • Roll the dough into a larger flat piece and place into a 9-inch pie tin.
  • Preheat oven to 350 F (175 C).

To make the Pecan Pie filling

  • Melt the ghee and add in the vanilla extract and erythritol.
  • In a separate bowl, whisk the eggs and then combine with the ghee and 1 cup of chopped pecans.
  • Pour the filling mixture into the pie crust.
  • Top with the whole pecan halves.
  • Bake for 30 minutes until set. Check to make sure it doesn’t get too browned.
