Keto Instant Steamed Mussels in Red Wine

Ingredients
  

  • 2 lbs mussels scrubbed and debeard
  • 1 cup dry red wine
  • 1 scallion diced
  • 2 cloves garlic crushed
  • 2 Tbsp fresh parsley finely chopped

Instructions
 

  • Before cooking, look over the mussels carefully. The mussels should be tightly closed. Discard any mussels with cracked shells.
  • Also, the mussels should smell like the ocean – fresh and salty.
  • Pour the wine, onion, garlic and fresh parsley in your Instant Pot. Season it with the salt and pepper.
  • Add the steamer basket (or trivewith the mussels.
  • Lock lid into place and set on the STEAM setting for 3-4 minutes.
  • After the pressure cooking time has finished, press “Cancel” and care-fully flip the Quick Release valve to let the pressure out.
  • Serve hot.
