Keto Instant Steamed Mussels in Red Wine
Ingredients
- 2 lbs mussels scrubbed and debeard
- 1 cup dry red wine
- 1 scallion diced
- 2 cloves garlic crushed
- 2 Tbsp fresh parsley finely chopped
Instructions
- Before cooking, look over the mussels carefully. The mussels should be tightly closed. Discard any mussels with cracked shells.
- Also, the mussels should smell like the ocean – fresh and salty.
- Pour the wine, onion, garlic and fresh parsley in your Instant Pot. Season it with the salt and pepper.
- Add the steamer basket (or trivewith the mussels.
- Lock lid into place and set on the STEAM setting for 3-4 minutes.
- After the pressure cooking time has finished, press “Cancel” and care-fully flip the Quick Release valve to let the pressure out.
- Serve hot.
