Keto Instant Steamed Mussels in Red Wine

- 2 lbs mussels scrubbed and debeard
- 1 cup dry red wine
- 1 scallion diced
- 2 cloves garlic crushed
- 2 Tbsp fresh parsley finely chopped
Before cooking, look over the mussels carefully. The mussels should be tightly closed. Discard any mussels with cracked shells.
Also, the mussels should smell like the ocean – fresh and salty.
Pour the wine, onion, garlic and fresh parsley in your Instant Pot. Season it with the salt and pepper.
Add the steamer basket (or trivewith the mussels.
Lock lid into place and set on the STEAM setting for 3-4 minutes.
After the pressure cooking time has finished, press “Cancel” and care-fully flip the Quick Release valve to let the pressure out.
Serve hot.
