Keto {Honey} Mustard Grilled Pork Chops

I’m constantly trying come up with weeknight dishes that can be prepared in a flash after a long day. One of the easiest ways to make this happen is to prepare some sort of marinade in advance. I love the contrast of flavors and textures in this marinade.  I used monkfruit sweetener to balance the spice of the mustard and achieve that sweet and tangy honey mustard flavor. If you are unfamiliar with monkfruit, it is keto friendly sweetener. Â
Make a batch of this marinade in advance for a simple and delicious weeknight meal. Add in your favorite side of greens or other vegetables and dinner is served!

Keto {Honey} Mustard Grilled Pork Chops
Ingredients
- 1 lb pork chops
- 1/4 cup monk fruit sweetener
- 2 tablespoons dijon mustard
- 2 tablespoons whole grain dijon mustard
- 2 tablespoons apple cider vinegar
- 1 tablespoon soy sauce
- 2 cloves garlic, diced
- Salt and pepper to taste
Instructions
- Mix together all ingredients less the pork chops in a shallow dish or gallon sized baggie. Add pork chops and cover with marinade. Let marinate for at least 1 hour, or even overnight.
- Remove pork chops and pour remaining marinade in a sauce pan.
- Grill pork chop over medium-high heat until lightly golden brown, about 3-5 minutes per side.
- Serve with extra sauce and your favorite vegetable or side salad.
