Keto Dry Beetroot Snack (Instant Pot)

Ingredients
  

  • 5 medium beets
  • Salt and black pepper per taste
  • 1/4 cup garlic-in- fused olive oil
  • 2 cups of water

Instructions
 

  • Wash and peel beets; thinly slice a beet with a mandolin.
  • Sprinkle beetroot slices with olive oil, and salt and pepper to taste. Spray a baking dish with a cooking spray.
  • Layer beets on a baking dish.
  • Add water to the inner stainless steel pot in the Instant Pot, and place the trivet inside.
  • Place the baking dish on a trivet.
  • Lock lid into place and set on the MANUAL setting for 15 minutes.
  • Press Natural Release.
  • Serve on room temperature.
