- 1¼ cups full-fat coconut milk
- ⅓ cup shredded coconut
- ¼ cup coconut flour
- 3 T ground flax seed
- 1 T collagen protein powder
- ¼ t monk fruit powder
- ½ t vanilla extract
- ½ t cinnamon optional
- Optional: Berries, nuts, and seeds for toppings
Instructions
- Pour the coconut milk into the bowl of the Instant Pot.
- Add the remaining ingredients and stir to combine.
- Lock the lid into place and move the vent knob to the sealed position. Set mode to manual and cook on high pressure for 4 minutes.
- Use the quick release, remove the lid, and stir the contents thoroughly.
- Serve warm with optional toppings.
