Keto Chilled Avocado and Endive Soup
- 3 endives
- 1 avocado (diced finel2 spring onions finely chopped
- 1 cup Greek yogurt plain
- 1 Tbsp olive oil
- 1 clove garlic melted 1 tsp cardamom ground
- 4 fresh mint leaves chopped
- Salt to taste
- Place all ingredients from list above in your high- speed blender.
- Blend until smooth and creamy.
- Refrigerate for 2-3 hours and serve cold.
