Preheat oven to 400 F/200 C degrees.
Cut the spaghetti squash in half and remove the seeds with a spoon.
Season it with avocado oil, salt, and pepper.
Place the squash cut side down on baking sheet and bake until golden, 30-40 minutes.
Remove from the oven and let cook for 10 minutes.
Use a fork and scrape out “spaghetti.”
Heat the oil in a frying skillet over medium-high heat.
Add the chicken cubes, season with salt and pepper and cook for about 2-3 minutes on each side.
Add your chicken and “spaghetti” to a large bowl and stir.
Taste and adjust salt and pepper.
