Keto Chicken with Squash “Spaghetti”
Ingredients
- 1 lb spaghetti squash
- 1 Tbsp avocado oil
- Salt & ground pepper to taste
- 1 lb chicken breasts bone-less, skinless, cubed i
- 2 Tbsp garlic-infused olive oil
Instructions
- Preheat oven to 400 F/200 C degrees.
- Cut the spaghetti squash in half and remove the seeds with a spoon.
- Season it with avocado oil, salt, and pepper.
- Place the squash cut side down on baking sheet and bake until golden, 30-40 minutes.
- Remove from the oven and let cook for 10 minutes.
- Use a fork and scrape out “spaghetti.”
- Heat the oil in a frying skillet over medium-high heat.
- Add the chicken cubes, season with salt and pepper and cook for about 2-3 minutes on each side.
- Add your chicken and “spaghetti” to a large bowl and stir.
- Taste and adjust salt and pepper.
- Serve.
