Carnivore Mayonnaise
Carnivore Mayonnaise is a rich, creamy condiment that fits perfectly into a carnivore or low-carb diet. Made with simple ingredients like egg yolks, animal fat (such as beef tallow or pork lard), and a pinch of salt, it’s an easy-to-make alternative to traditional mayonnaise. This homemade version adds a savory, satisfying flavor to meats, vegetables, or as a dip, providing a boost of healthy fats while keeping carbs to a minimum. Perfect for those seeking a no-carb, high-fat option!

Carnivore Mayonnaise
Ingredients
- 1 cup 240ml rendered animal fat (such as beef tallow, bacon fat, or duck fat), melted but not hot
- 2 egg yolks
- 1 tablespoon 15ml lemon juice or apple cider vinegar
- Salt to taste
Instructions
- In a blender or food processor, combine the egg yolks and lemon juice or apple cider vinegar. Blend on low speed until well combined.
- With the blender or food processor running on low speed, slowly drizzle in the melted animal fat in a steady stream. Continue blending until the mixture emulsifies and thickens into mayonnaise.
- Once the mayonnaise reaches the desired consistency, season with salt to taste and blend briefly to incorporate.
- Transfer the carnivore mayonnaise to a clean jar or airtight container and refrigerate for at least 30 minutes to allow the flavors to meld.
- Serve the carnivore mayonnaise as a dip for crispy chicken drumettes or use it as a spread for other carnivore-friendly dishes.
