Carnivore Mayonnaise

- 1 cup 240ml rendered animal fat (such as beef tallow, bacon fat, or duck fat), melted but not hot
- 2 egg yolks
- 1 tablespoon 15ml lemon juice or apple cider vinegar
- Salt to taste
In a blender or food processor, combine the egg yolks and lemon juice or apple cider vinegar. Blend on low speed until well combined.
With the blender or food processor running on low speed, slowly drizzle in the melted animal fat in a steady stream. Continue blending until the mixture emulsifies and thickens into mayonnaise.
Once the mayonnaise reaches the desired consistency, season with salt to taste and blend briefly to incorporate.
Transfer the carnivore mayonnaise to a clean jar or airtight container and refrigerate for at least 30 minutes to allow the flavors to meld.
Serve the carnivore mayonnaise as a dip for crispy chicken drumettes or use it as a spread for other carnivore-friendly dishes.
