Keto Cheesy Rosemary Focaccia Bread
Ingredients
- 1 medium head of cauliflower riced
- ½ cup Parmesan cheese
- ¾ cup thick plain yogurt
- 2 eggs
- 1 cup cheddar cheese shredded, divided
- 1 teaspoon garlic powder
- 1 tablespoon fresh rosemary finely chopped
- Salt and ground black pepper to taste
Instructions
- Preheat oven to 400˚Lightly grease a 9-inch pie dish
- Using a food processor, pulse cauliflower florets until riced.
- In a large bowl, combine riced cauliflower along with ½ of the cheddar cheese and remaining ingredients, and mix until thoroughly combined.
- Pour mixture into pie dish, and press down evenly.
- Bake for 45 minutes or until all of the water is cooked out of the cauliflower.
- Remove from oven, and sprinkle remaining ½ cup of cheddar cheese over the top. Return to the oven, and cook for an additional 10 minutes.
- Cut into slices, serve.
