Keto Cheesy Rosemary Focaccia Bread

  • 1 medium head of cauliflower riced
  • ½ cup Parmesan cheese
  • ¾ cup thick plain yogurt
  • 2 eggs
  • 1 cup cheddar cheese shredded, divided
  • 1 teaspoon garlic powder
  • 1 tablespoon fresh rosemary finely chopped
  • Salt and ground black pepper to taste


  • Preheat oven to 400˚Lightly grease a 9-inch pie dish
  • Using a food processor, pulse cauliflower florets until riced.
  • In a large bowl, combine riced cauliflower along with ½ of the cheddar cheese and remaining ingredients, and mix until thoroughly combined.
  • Pour mixture into pie dish, and press down evenly.
  • Bake for 45 minutes or until all of the water is cooked out of the cauliflower.
  • Remove from oven, and sprinkle remaining ½ cup of cheddar cheese over the top. Return to the oven, and cook for an additional 10 minutes.
  • Cut into slices, serve.
