Ingredients
  

  • 1 T olive oil
  • 10 oz fresh spinach leaves
  • 4 oz canned artichoke hearts diced
  • 4 oz full-fat cream cheese
  • 1 T nutritional yeast
  • 4 T unsweetened coconut cream
  • 1 t apple cider vinegar
  • ½ t dried chili flakes
  • 1 garlic clove minced
  • Sea salt and black pepper to taste

Instructions
 

  • Preheat the oven to 350°F.
  • In a skillet, heat the olive oil over medium-high heat. Add the spinach and cook for 2 to 3 minutes, or until it wilts.
  • In a large bowl, add the spinach, artichoke hearts, cream cheese, nutritional yeast, coconut cream mixed with apple cider vinegar, chili flakes, garlic, sea salt, and black pepper and stir to combine.
  • Spray a 6-inch baking dish with olive oil and pour the spinach mixture into the pan. Bake for 10 to 15 minutes, or until slightly golden. Serve immediately.
