medium head of cauliflower
riced

Parmesan cheese

thick plain yogurt

cheddar cheese
shredded, divided

teaspoon
garlic powder

tablespoon
fresh rosemary
finely chopped
Salt and ground black pepper
to taste
Instructions
Preheat oven to 400˚Lightly grease a 9-inch pie dish
Using a food processor, pulse cauliflower florets until riced.
In a large bowl, combine riced cauliflower along with ½ of the cheddar cheese and remaining ingredients, and mix until thoroughly combined.
Pour mixture into pie dish, and press down evenly.
Bake for 45 minutes or until all of the water is cooked out of the cauliflower.
Remove from oven, and sprinkle remaining ½ cup of cheddar cheese over the top. Return to the oven, and cook for an additional 10 minutes.
Cut into slices, serve.
