Herbed Chicken Stew
Ingredients
- 1½ lbs boneless skinless, chicken thighs, cubed
- 1 cup chicken stock
- 1 8-oz can no-sugar-added diced tomatoes
- ¼ lb carrots diced
- ¼ lb zucchini diced
- 2 T onion diced
- 3 garlic cloves minced
- 1 T chopped fresh thyme
- 1 T chopped fresh oregano
- ½ t sea salt
- ½ t black pepper
- ¼ t xanthan gum optional
Instructions
- In a slow cooker, place all of the ingredients except the xanthan gum and toppings. Cover and cook on LOW for 7 hours.
- For a thicker stew, 15 minutes before serving, stir in the xanthan gum, if desired.
- Serve the stew topped with the cheddar cheese and parsley.
