Herbed Chicken Stew

Ingredients
  

  • lbs boneless skinless, chicken thighs, cubed
  • 1 cup chicken stock
  • 1 8-oz can no-sugar-added diced tomatoes
  • ¼ lb carrots diced
  • ¼ lb zucchini diced
  • 2 T onion diced
  • 3 garlic cloves minced
  • 1 T chopped fresh thyme
  • 1 T chopped fresh oregano
  • ½ t sea salt
  • ½ t black pepper
  • ¼ t xanthan gum optional

Instructions
 

  • In a slow cooker, place all of the ingredients except the xanthan gum and toppings. Cover and cook on LOW for 7 hours.
  • For a thicker stew, 15 minutes before serving, stir in the xanthan gum, if desired.
  • Serve the stew topped with the cheddar cheese and parsley.
