Instructions
In a slow cooker, place all of the ingredients except the xanthan gum and toppings. Cover and cook on LOW for 7 hours.
For a thicker stew, 15 minutes before serving, stir in the xanthan gum, if desired.
Serve the stew topped with the cheddar cheese and parsley.
