Ingredients
  

  • 8 lamb chops about 1 inch thick
  • Salt to taste
  • 2 tablespoons lard
  • 4 tablespoons unsalted butter softened

Instructions
 

Season the Lamb Chops:

  • Pat the lamb chops dry with paper towels.
  • Season both sides generously with salt.
  • Brush each chop with lard.

Grill the Lamb Chops:

  • Preheat a grill to medium-high heat.
  • Place the lamb chops on the grill and cook for 4-5 minutes per side for medium-rare, or until they reach your desired level of doneness.
  • Remove from the grill and let rest for 5 minutes.

Serve:

  • Top each lamb chop with a slice of the butter.
  • Serve immediately.
