  • 1 lb 450 g mixed duck organs (heart, liver), finely chopped
  • 6 cups 1.4 liters duck or chicken broth
  • Salt to taste

  • Brown the Duck Meat: In a large pot, sear the duck meat and organs over medium heat until slightly browned.
  • Simmer: Add the broth to the pot with the duck meat and organs. Bring to a simmer.
  • Cook: Allow the stew to simmer for 1-2 hours, until the meat and organs are tender.
  • Season: Salt the stew to taste.
  • Serve: Dish out the stew into bowls, ensuring each serving includes both meat and organs.
