Creamy Garlic Cauliflower Shrimp
Ingredients
- 1 T olive oil
- 1 T grated fresh ginger
- 1 t cumin seeds
- ½ t ground turmeric
- 2 garlic cloves minced
- 3 cups cauliflower rice
- ½ red bell pepper chopped
- ½ cup full-fat coconut milk
- 8 oz shrimp peeled and deveined
- Sea salt and black pepper to taste
- 2 T chopped fresh parsley
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the ginger, cumin, turmeric, and garlic. Sauté for 1 minute.
- Add the cauliflower rice, bell pepper, and coconut milk.
- Cover and simmer for 7 to 8 minutes, or until the bell pepper and cauliflower soften.
- Add the shrimp and season with sea salt and black pepper to taste. Cook for 5 minutes, or until the shrimp are pink.
- Top with the parsley and serve immediately.
