Creamy Garlic Cauliflower Shrimp

Ingredients
  

  • 1 T olive oil
  • 1 T grated fresh ginger
  • 1 t cumin seeds
  • ½ t ground turmeric
  • 2 garlic cloves minced
  • 3 cups cauliflower rice
  • ½ red bell pepper chopped
  • ½ cup full-fat coconut milk
  • 8 oz shrimp peeled and deveined
  • Sea salt and black pepper to taste
  • 2 T chopped fresh parsley

Instructions
 

  • In a large skillet, heat the olive oil over medium heat. Add the ginger, cumin, turmeric, and garlic. Sauté for 1 minute.
  • Add the cauliflower rice, bell pepper, and coconut milk.
  • Cover and simmer for 7 to 8 minutes, or until the bell pepper and cauliflower soften.
  • Add the shrimp and season with sea salt and black pepper to taste. Cook for 5 minutes, or until the shrimp are pink.
  • Top with the parsley and serve immediately.
