Instructions
In a large skillet, heat the olive oil over medium heat. Add the ginger, cumin, turmeric, and garlic. Sauté for 1 minute.
Add the cauliflower rice, bell pepper, and coconut milk.
Cover and simmer for 7 to 8 minutes, or until the bell pepper and cauliflower soften.
Add the shrimp and season with sea salt and black pepper to taste. Cook for 5 minutes, or until the shrimp are pink.
Top with the parsley and serve immediately.
