Cinnamon Buns with Cream Cheese Frosting
Ingredients
For the dough:
- 3 cups shredded mozzarella cheese
- 2 T full-fat cream cheese
- 2 large eggs whisked
- 2 cups finely ground almond flour
- 4 T powdered erythritol sweetener
For the filling:
- 2 T water
- 2 T powdered erythritol sweetener
- 2 T cinnamon
For the frosting:
- 4 oz full-fat cream cheese
- 2 cups powdered erythritol sweetener
- 3 T almond milk
Instructions
Make the dough:
- Preheat the oven to 350°F. In a saucepan, add the mozzarella and cream cheese and melt over low heat, stirring. Transfer the melted cheese to a large bowl. Add the eggs and stir to combine. Add the almond flour and erythritol sweetener and knead the dough until smooth On a flat surface, roll the dough into a 6- by 17-inch rectangle.
Make the filling:
- In a small bowl, combine the water, powdered erythritol sweetener, and cinnamon.
- Spread the filling on the dough. Cut the dough into six 1-inch strips. Roll each strip into a roll. Bake the rolls for 40 minutes, or until the dough is cooked through.
Make the frosting:
- In a bowl, whisk the cream cheese, powdered erythritol sweetener, and almond milk until thick and creamy.
- Remove the rolls from the oven and immediately spread the frosting on the top of the cinnamon rolls. Serve warm.
