Spinach and Cheese Stuffed Peppers

Ingredients
  

  • 1 T grass-fed butter
  • 1 green onion chopped
  • 1 cup baby spinach
  • ½ cup cream cheese
  • ½ t sea salt
  • ½ t black pepper
  • 2 Kapia peppers or any sweet red pepper, halved lengthwise
  • ¼ cup grated Parmesan cheese

Instructions
 

  • Preheat the oven to 400°F. Line a rimmed baking sheet with parchment paper.
  • In a skillet, melt the butter over medium heat. Add the green onion and sauté for 1 minute. Add the spinach and cook for 2 to 3 minutes, or until it wilts.
  • Transfer the spinach mixture to a bowl. Discard any liquid.
  • Add the cream cheese, sea salt, and black pepper. Mix well.
  • Fill the pepper halves with the mixture and place on the baking sheet. Top with the Parmesan. Bake for 10 to 12 minutes, or until the peppers are tender and the cheese is golden.
