Pork and Mushroom Skillet
Ingredients
- 6 oz pork loin cut into small pieces
- Sea salt and black pepper to taste
- 1 T grass-fed butter
- 1 T olive oil
- 2 garlic cloves minced
- 6 baby bella mushrooms sliced
- 3 oz cream cheese
- 2 T heavy cream
- 2 T grated Parmesan cheese
- 1 cup baby spinach
Instructions
- Season the pork with ½ teaspoon sea salt and ½ teaspoon pepper.
- In a medium skillet, melt the butter over medium-high heat. Add the pork and brown on all sides, about 4 minutes. Transfer the pork to a plate and set aside.
- Add the olive oil, garlic, and mushrooms. Cook for 3 minutes, turning the mushroom slices to brown evenly.
- Reduce the heat to medium, add the cream cheese and heavy cream, and stir until the cream cheese melts. Cook for 2 minutes. Add the Parmesan and cook for 1 minute.
- Return the pork to the skillet, add the spinach, and cook for 2 to 3 minutes, or until the spinach wilts and the pork is heated through. Season with additional pepper, if desired.
