Ingredients
  

  • 6 oz pork loin cut into small pieces
  • Sea salt and black pepper to taste
  • 1 T grass-fed butter
  • 1 T olive oil
  • 2 garlic cloves minced
  • 6 baby bella mushrooms sliced
  • 3 oz cream cheese
  • 2 T heavy cream
  • 2 T grated Parmesan cheese
  • 1 cup baby spinach

Instructions
 

  • Season the pork with ½ teaspoon sea salt and ½ teaspoon pepper.
  • In a medium skillet, melt the butter over medium-high heat. Add the pork and brown on all sides, about 4 minutes. Transfer the pork to a plate and set aside.
  • Add the olive oil, garlic, and mushrooms. Cook for 3 minutes, turning the mushroom slices to brown evenly.
  • Reduce the heat to medium, add the cream cheese and heavy cream, and stir until the cream cheese melts. Cook for 2 minutes. Add the Parmesan and cook for 1 minute.
  • Return the pork to the skillet, add the spinach, and cook for 2 to 3 minutes, or until the spinach wilts and the pork is heated through. Season with additional pepper, if desired.
