Keto Vanilla Pudding
Ingredients
- 1 can of full-fat coconut milk
- 4 egg yolks
- 5 tablespoons arrowroot powder
- 1 ½ teaspoons vanilla extract
- 4 drops liquid stevia
Instructions
- Prepare a double boiler over medium heat. Whisk together egg yolks and arrowroot powder. Pour in coconut milk slowly, whisking until mixture thickens.
- Remove from heat. Add vanilla extract and liquid stevia.
- Pour mixture into a bowl, cover, and refrigerate overnight before serving.
