Ingredients
  

  • 10 asparagus shoots chopped and blanched (2 min)
  • 1/4 onion diced
  • Coconut oil to cook onions in
  • 2 Tablespoons 30 mcoconut cream or coconut milk (from cans
  • 2 Tablespoons (4 fresh parsley
  • 1 teaspoon (5 mlemon juice
  • 1/2 teaspoon 2 salt (or to taste
  • Dash of pepper

Instructions
 

  • Sauté the diced onions in coconut oil until they turn translucent.
  • If you haven’t done so already, blanch the asparagus pieces in boiling water for 2 minutes and drain immediately.
  • Place the sautéed onion, blanched asparagus, coconut cream, parsley, lemon juice, salt, and pepper into a blender.
  • Blend really well. Serve warm or cold.
