- 10 asparagus shoots chopped and blanched (2 min)
- 1/4 onion diced
- Coconut oil to cook onions in
- 2 Tablespoons 30 mcoconut cream or coconut milk (from cans
- 2 Tablespoons (4 fresh parsley
- 1 teaspoon (5 mlemon juice
- 1/2 teaspoon 2 salt (or to taste
- Dash of pepper
Sauté the diced onions in coconut oil until they turn translucent.
If you haven’t done so already, blanch the asparagus pieces in boiling water for 2 minutes and drain immediately.
Place the sautéed onion, blanched asparagus, coconut cream, parsley, lemon juice, salt, and pepper into a blender.
Blend really well. Serve warm or cold.
