Ingredients
  

  • 1 medium ripe avocado
  • 2 romaine lettuce leaves
  • 1 cup 240 mcoconut milk, chilled (from cartons or diluted canned coconut milk
  • 1 Tablespoon (15 mlime juice
  • 20 fresh mint leaves
  • Salt to taste

Instructions
 

  • Place all the ingredients into a blender and blend really well. The soup should be thick but not like a puree.
  • Chill in fridge for 5-10 minutes and serve.
