Ingredients
- 1 medium ripe avocado
- 2 romaine lettuce leaves
- 1 cup 240 mcoconut milk, chilled (from cartons or diluted canned coconut milk
- 1 Tablespoon (15 mlime juice
- 20 fresh mint leaves
- Salt to taste
Instructions
- Place all the ingredients into a blender and blend really well. The soup should be thick but not like a puree.
- Chill in fridge for 5-10 minutes and serve.
