Italian Tuna Salad
Ingredients
- ½ cup olive oil
- 2 medium lemons juiced, plus zest
- 1 t Dijon mustard
- 1 medium garlic clove minced
- 2 heads lettuce romaine hearts, chopped
- 2 medium roasted red peppers chopped
- ½ cup artichoke hearts chopped
- ½ lb asparagus cooked and chopped
- ½ cup olives kalamata, pitted
- 4 medium pepperoncini
- 3 6 oz cans tuna, drained and flaked
- ⅛ t sea salt to taste
- ⅛ t black pepper to taste
Instructions
- In a large bowl, whisk the olive oil, lemon juice, zest, mustard, and garlic.
- When well combined, add the remaining ingredients, and toss to coat well. Season with salt and pepper to taste before serving.
