Ingredients
  

  • ½ cup olive oil
  • 2 medium lemons juiced, plus zest
  • 1 t Dijon mustard
  • 1 medium garlic clove minced
  • 2 heads lettuce romaine hearts, chopped
  • 2 medium roasted red peppers chopped
  • ½ cup artichoke hearts chopped
  • ½ lb asparagus cooked and chopped
  • ½ cup olives kalamata, pitted
  • 4 medium pepperoncini
  • 3 6 oz cans tuna, drained and flaked
  • t sea salt to taste
  • t black pepper to taste

Instructions
 

  • In a large bowl, whisk the olive oil, lemon juice, zest, mustard, and garlic.
  • When well combined, add the remaining ingredients, and toss to coat well. Season with salt and pepper to taste before serving.
