Creamy Chicken with Broccoli

Ingredients
  

  • ½ t dried rosemary
  • ½ t garlic powder
  • ½ t onion powder
  • ½ t sea salt
  • 2 4-oz boneless, skinless chicken breasts, butterflied
  • 2 T olive oil divided
  • ½ head broccoli cut into florets
  • ¼ cup heavy cream
  • 2 T cream cheese

Instructions
 

  • In a small bowl, combine the rosemary, garlic powder, onion powder, and sea salt. Rub the chicken with the herb mixture.
  • In a large skillet, heat 1 tablespoon of the olive oil over medium heat. Add the chicken and cook for 2 to 3 minutes on each side, or until nearly cooked through.
  • Remove from the skillet and set aside.
  • In the same skillet, heat the remaining 1 tablespoon olive oil. Add the broccoli and cook for 3 minutes, stirring occasionally. Whisk in the heavy cream and cream cheese until the cream cheese is melted. Stir until well combined. Cook for 2 minutes.
  • Return the chicken to the skillet and simmer for 2 to 3 minutes, or until heated through.
