Ingredients
  

  • 4 lbs about 1.8 kg of mixed beef bones (knuckles, marrow, and meaty ribs)
  • Salt to taste
  • Water to cover

Instructions
 

  • Roasting the Bones: Preheat your oven to 400°F (200°C). Place the beef bones on a baking sheet and roast for 30 minutes until they are well-browned. This step enhances the flavor of the broth.
  • Preparing the Broth: Transfer the roasted bones to a large stockpot. Fill the pot with enough water to cover the bones by a couple of inches. Bring to a boil over high heat, then reduce the heat to a low simmer. Skim off any foam that rises to the top during the first few minutes of simmering.
  • Simmering: Allow the broth to simmer on low heat for 12-24 hours. The longer you simmer, the more flavorful and nutrient-rich the broth will be. Add water as needed to keep the bones submerged.
  • Seasoning: Season the broth with salt to taste in the last 30 minutes of simmering.
  • Straining the Broth: After simmering, remove the pot from the heat. Strain the broth through a fine-mesh sieve into a large container, discarding the solids.
  • Cooling and Storing: Let the broth cool to room temperature. Once cooled, you can skim off the fat that solidifies on the surface if desired. Store the broth in the refrigerator for up to 5 days or freeze for longer storage.
