Chocolate Chip Pecan Cookies
Ingredients
- 2½ cups finely ground almond flour
- ½ t baking powder
- ¼ cup erythritol sweetener
- ¼ t sea salt
- 1 large egg beaten
- ½ cup unsalted grass-fed butter softened
- ½ cup sugar-free chocolate chips
- ½ cup pecans
Instructions
- Preheat the oven to 350°F. In a bowl, add the almond flour, baking powder, erythritol sweetener, and sea salt and stir to combine. Add the egg and butter and mix well.
- Add the chocolate chips and pecans. Stir to combine.
- Roll the dough into 12 balls and arrange on a baking sheet. With your thumb or the back of a spoon, press the dough balls down to flatten into a cookie shape. Bake the cookies for 12 minutes, or until golden. Transfer to a wire rack to cool completely.
