Carnivore Seafood Gumbo
Ingredients
- 2 lbs about 0.9 kg mixed seafood (such as shrimp, crab meat, and scallops)
- 6 cups about 1.4 liters fish broth
- 1 cup about 240 ml heavy cream
- 2 tablespoons about 30 ml animal fat (duck fat or lard)
- 1 teaspoon about 5 ml salt, or to taste
Optional:
- 1/2 teaspoon about 2.5 ml black pepper, or to taste (for those who include spices in their carnivore diet)
Instructions
- Preparing the Seafood: Clean and prepare the seafood as necessary. If using shrimp, peel and devein them. Crab meat should be free of shells, and scallops cleaned.
- Heating the Broth: In a large pot, bring the fish broth to a simmer over medium heat.
- Thickening the Broth: Reduce the heat to low and stir in the heavy cream and animal fat, whisking until the fat is completely melted and the mixture is well combined. This mixture will slightly thicken the broth, giving it a richer texture reminiscent of traditional gumbo.
- Adding Seafood: Add the mixed seafood to the pot, cooking just until the seafood is cooked through and tender, about 5-7 minutes for shrimp and scallops, a bit longer for crab meat if it’s raw.
- Seasoning: Season the gumbo with salt and, if using, black pepper. Adjust the seasoning to your taste preferences.
- Serving: Once the seafood is cooked and the gumbo is seasoned to your liking, remove from heat and ladle into bowls.
