Ingredients
  

  • 2 large eggs
  • 1 cup shredded mozzarella cheese
  • 1/2 teaspoon baking powder optional, for fluffiness

Instructions
 

Prepare the Batter:

  • In a bowl, whisk the eggs until well beaten.
  • Add the shredded mozzarella cheese and baking powder (if using) to the eggs. Mix until well combined.

Cook the Chaffles:

  • Preheat a waffle iron according to the manufacturer’s instructions.
  • Pour half of the batter into the waffle iron, spreading it evenly.
  • Close the waffle iron and cook until the chaffle is golden brown and crispy, about 3-4 minutes.
  • Repeat with the remaining batter.

Serve:

  • Remove the chaffles from the waffle iron and let them cool slightly.
  • Serve warm. These can be enjoyed plain or used as a base for various toppings
