Turkey and Mushrooms
Ingredients
- 2 T grass-fed butter melted
- 2 lbs skinless boneless turkey breast, cut into
- 1- inch cubes
- 1 lb frozen mixed mushrooms
- 1 white onion sliced
- ½ cup water
- ½ t sea salt
- ¼ t black pepper
- ½ cup heavy cream
- ½ t xanthan gum
- 1½ cups cooked cauliflower rice if desired
- Green onions for garnish
Instructions
- In a slow cooker, add the butter, turkey, mushrooms, onion, water, sea salt, and black pepper.
- Cover and cook on LOW for 3 hours, stirring every 30 minutes.
- After 2 hours, add the heavy cream and xanthan gum. Mix well. Cook for 1 hour, until the sauce is creamy.
- Serve hot on its own or over cauliflower rice, if desired.
- Garnish with the sliced green onions.
